Black-Bean Burgers

2 Tbsp vegetable oil
1 stalk celery, chopped
1 onion, finely chopped
1 clove garlic, minced
1 15-oz can black beans, rinsed and drained
1 large egg, lightly beaten
1 Tbsp cumin
1/2 cup plain bread crumbs
Salt and pepper
1. Preheat oven to 375F; grease a large, rimmed baking sheet.
2. Warm oil in a skillet over medium-high heat. Add celery and onion. Stir 3 to 5 minutes. Add garlic and saute 1 minute longer.
3. Pour beans into a bowl and mash into a thick paste. Add celery mixture, egg, cumin and bread crumbs. Season with salt and pepper. Form into 4 patties and bake on baking sheet until firm and set, about 10 minutes on each side. Serve on whole-grain buns with lettuce, tomato and sliced red onion.
