Chilaquiles
In 8-in-square glass baking dish coated with nonstick cooking spray, layer half of each of the following ingredients; 2 cup shredded cooked chicken or turkey. 1 1/3 cup thick and chunky salsa, 1 can (15 to 19 oz) rinsed and drained black beans, 1 cup shredded Mexican cheese blend, and 3 cups coarsely crushed tortilla chips. Repeat layering. Bake in 350F oven 40 minutes to heat through. Serves 6.
