Roasted Tilapia, Tomatoes & Garlic

Ingredients

1 cup grape tomatoes

2 cloves garlic, smashed

2 tsp olive oil

Kosher salt and black pepper

1 6-oz tilapia fillet

1 Tbsp fresh flat-leaf parsley, roughly chopped

1 tsp capers, roughly chopped

1 piece crusty bread, warmed


1. Heat oven to 400 degrees Farenheit.

2. On a small rimmed baking sheet or in a shallow baking dish, toss tomatoes, garlic, 1 tsp oil, 1/8 tsp salt and a pinch of pepper. Roast for 5 minutes.

3. Nestle the fish among the tomatoes, drizzle with remaining 1 tsp oil, and season with 1/8 tsp salt and a pinch of pepper. Roast until fish is opaque throughout and tomatoes have begun to burst, 12 to 15 minutes.

4. Transfer the fish to a plate. Sprinkle the tomatoes with the parsley and capers, and toss to combine. Serve with fish and bread.
