Slow-Cooker Bolognese Sauce

1 Tbsp unsalted butter
1 small onion, chopped
1 celery rib, finely chopped
1 carrot, finely chopped
2 lb lean ground beef
Salt and pepper
Pinch of nutmeg
1 cup whole milk
1 cup white wine
2 28-oz cans crushed tomatoes
1. Melt butter in a large pan over medium heat. Add onion, celery and carrot; saute 5 minutes. Turn heat to high, add beef and cook, stirring, until no longer pink, about 5 minutes. Season with salt, pepper and nutmeg.
2. Pour in milk and wine; bring to a boil. Lower heat and cook at a lively simmer until most of liquid has evaporated, about 15 minutes.
3. Transfer mixture to slow cooker, stir in tomatoes, cover and cook on low for 8 hours. Stir, then cook until sauce is slightly thickened, about 30 minutes longer.
