Thai Chicken Noodle Soup
Start with Hearty Chicken Noodle Soup. Omit the dill. Add one 2 1/2-in piece fresh ginger (sliced) along with the vegetables. Before returning the shredded chicken to the pot, add two 14-oz cans light coconut milk and bring to a boil. Stir in the chicken, noodles, 1/2 cup fresh lime juice and 1/2 cup roughly chopped fresh cilantro.
