Tossed Salad with Mushrooms

2 Tbsp red wine vinegar

1/2 tsp salt

1/8 tsp pepper

1/2 tsp oregano

5 Tbsp olive oil

8 cups mixed baby salad greens

1 pint cherry tomatoes, halved

1 8-oz jar marinated mushrooms, drained


Whisk together vinegar, salt, pepper, oregano and olive oil. Place greens, tomatoes and mushrooms in a large salad bowl and toss with dressing. Serve immediately.


Kitchen Tips

  • Add more veggies. - The marinated mushrooms lend this salad a tangy flavor. For more color and flair, toss in additional jarred vegetables such as artichoke hearts and roasted red peppers. If you prefer a bit of heat, chop up jarred pepperoncini and add it to the salad.
  • Get a head start. - You can make the salad components the day before the party. Whisk together the dressing and wash and dry the greens and tomatoes. Store the vegetables and dressing separately and toss just before serving. (Shake the dressing to combine right before pouring it on the salad.)
  • Give it some crunch. - Top the salad with a few flavorful croutons just before serving.
