Western Frittata

2 Tbsp vegetable oil
1 small onion, chopped
1/2 green bell pepper, seeded and diced
6 oz boiled ham, diced
8 large eggs
Salt and pepper
1/2 cup shredded Cheddar
1. Preheat broiler and set rack about 6 inches from heat source.
2. Warm oil in a large, ovenproof nonstick skillet over medium-high heat. Add onion and pepper and cook, stirring, until softened, about 3 minutes. Stir in ham and saute 1 minute.
3. Whisk eggs with salt and pepper until smooth and blended. Pour evenly over mixture in skillet. Place skillet over medium-low heat and cook, shaking often, until frittata is almost set in center and lightly browned on bottom, 10 to 12 minutes. Sprinkle cheese over top.
4. Transfer skillet to broiler and cook, watching carefully to avoid burning, until cheese is bubbly, 1 to 2 minutes. Cut into wedges and serve hot or at room temperature.
Kitchen Tips
- Keep it even. - The frittata will start to set after about 3 minutes on top of the stove. At that point, run a long spatula underneath to loosen it, making it easier to shake the pan and ensure even cooking.
- Try it in the a.m. - A frittata is a delicious, easy supper with a salad on the side. It also makes a great weekend breakfast; offer toasted whole-wheat English muffins and fresh fruit on the side.
- Stay veggie. - A classic western includes ham, but you can go with canned roasted green chiles or thawed frozen corn instead.
