Pozole
Start with Hearty Chicken Soup. Omit the noodles and dill. Add two 28-oz cans diced tomatoes (drained) and 1 Tbsp ancho chili powder with the vegetables. Add two 15-oz cans hominy (rinsed) along with the shredded chicken and simmer to heat through. Serve with tortilla chips and diced avocado.
